Gai Tom Kha (Chicken in mild Coconut and Galangal Soup)


Ingredientfor :
300 gms Thinly Sliced Chicken breast
200 gms Straw Mushrooms
1/2 cup Sliced Young Galangal
4 cups Coconut milk
3-4 Tablespoons Fish Sauce
3-4 Tablespoons Lemon Juice
1/2 cup Lemon Grass
4-5 leafs Wild Lime Leaf
2-3 pieces Hitted Chilli

Preparation :
1. Slice the young galanga (thinly) and lemongrass (short an inch pieces)
2. Tear wild lime leaf. (tear by line of the midrib)
3. Clean straw mushrooms and cut half piece.
4. Boid 3 and 1/2 cup Coconut milk in a pot over medium heat.
5. When it is boil, add young galangal, lemon grass , wild lime leaf , straw mushrooms and chicken breast.
6. Use low heat until chicken breast cooked.
7. Add fish sauce, lemon juice, chilli and off heat.
8. Serve in a bowl and dip by 1/2 cup coconut milk.
9. Serve with cooked rice is great.
